Paniolo
This single origin coffee from Chiapas Mexico is the perfect roast for those that love a rich and clean chocolately coffee. Panio;o is the drip and cold brew roast for all Akamai stores, but we especially appreciate how it shines on espresso. The tasting notes in the cup are chocolate, vanilla, honey, blueberries, whiskey, and walnuts. The name of this roast is an ode to the blend of Mexican and Hawaiian culture through the paniolo cowboys of the 19th century.

Tabi
This single origin coffee comes from the Quindio region of Colombia. It was grown by Leonid Ramirez at the microlot farm La Cortina de Hierro, where it is the only varietal grown. After harvesting, the coffee cherries were exposed to a dry aerobic fermentation of 24 hours and then placed inside grainpro bags for 50 hours maintaining a temperature below 22 degrees celsius. Finally, the coffee was pulped, gently washed, and placed on raised beds until ideal moisture content was achieved.
The varietal of Tabi is a hybrid of bourbon, typica, and timor that was developed in Colombia by Federación Nacional de Cafeteros. In the cup, we get a delicious balance of floral and fruit notes that make the perfect pour-over. We taste jasmine, cantaloupe, sugarcane, and cacao.

Sugarcane Processed Decaf
This decaf coffee is grown and processed in Colombia. While most decaf coffee is processed in water, this special decaffeination system uses sugarcane water which allows the coffee to retain its sweetness and flavor. This decaf is one the most delicious coffees you can find.

Juan Aloha
This single origin coffee, a roast we call Juan Aloha, comes from Colombia and is a blend of three varietals from various farms in the Nariño region of Colombia called Tablón de Gomez. This coffee supports multiple small local farmers in Colombia, and showcases a delicious washed coffee from the region. In the cup, it’s an incredibly sweet coffee that brings out delicious caramel, nutty and orange cream flavors to compliment it’s sweetness. Although it tastes great as a pour over as well, we roast this coffee specifically to use as our primary espresso.

Caturron 200
This deliciously fruity coffee is a single varietal called Caturron, grown exclusively in Colombia where it was discovered (as a mutation of Caturra) in 2016. Our caturron beans were grown by Luis A Calderon and delicately cared for at his farm. After harvesting, it spends 24 hours in aerobic fermentation before it is sealed into bags for another 200 hours. During this fermentation process, the beans are kept at a low temperature with C02, before being naturally processed and shipped to us. This coffee has a delightful balance of tart fruit and fine chocolate, and is fantastic as a pourover.
