Tabi
This single origin coffee comes from the Quindio region of Colombia. It was grown by Leonid Ramirez at the microlot farm La Cortina de Hierro, where it is the only varietal grown. After harvesting, the coffee cherries were exposed to a dry aerobic fermentation of 24 hours and then placed inside grainpro bags for 50 hours maintaining a temperature below 22 degrees celsius. Finally, the coffee was pulped, gently washed, and placed on raised beds until ideal moisture content was achieved.
The varietal of Tabi is a hybrid of bourbon, typica, and timor that was developed in Colombia by Federación Nacional de Cafeteros. In the cup, we get a delicious balance of floral and fruit notes that make the perfect pour-over. We taste jasmine, cantaloupe, sugarcane, and cacao.
