Mostly Sunny
Mostly Sunny is a single origin coffee from Chiapas Mexico. Roasted locally on Maui, it is a sweet, fruity, and floral coffee named in honor of the ever-changing weather on the island where it’s served. It is a single varietal, Catigua MG2, that is grown and produced by Seis Generaciones in Chiapas. Catigua is grown on the San Ramon plantation of their Peru Paris estate, at just under 1000 M above sea level under the shade of native coffee trees with volcanic soils and perfect natural weather conditions.
We enjoy it as a pour-over, where in the cup it begins with a sweet caramel body with a hint of lemon peel. As the cup cools, you’ll notice the fruit and floral notes arrive with strawberry, currant, and a hint of raspberry.
