Tropical Island
Pacamara is a unique and exotic varietal originating in El Salvador, but now grown in many regions as a beloved fruity and acidic coffee varietal. Akamai’s first ever Pacamara comes from our friends as Seis Generations in Chiapas, where it was hand picked and uniquely processed in an anaerobic slow dry fermentation. After the coffee cherries were harvested, they are placed in sealed bags and allowed to ferment. Then, the fermented cherries are placed on drying beds for weeks until they reach the right moisture level to be fully processed. We roast this coffee to highlight its bright tropical fruit and it’s silky smooth chocolate flavors; bringing out the best of both worlds in one cup.
